12-inch wraps or flour tortillas, warmed12 wraps
Cooked bacon, crumbled12 ounces

Preparation

  1. In bowl beat together eggs, milk, flour, salt, nutmeg and pepper. Fold in cheese, asparagus and green onions. Pour mixture into a half steam table pan (12x10x2"). Bake at 400°F for 45 minutes. Reduce temperature to 375°F; bake for 25 to 30 minutes, until knife inserted in center comes out clean. Let quiche set at least 10 minutes. Cut into 12 (4x2 1/2-inch) pieces.
  2. When ready to serve, place 1 serving of quiche on one end of softened tortilla. Top with 1 ounce bacon. Fold two opposite edges of tortilla toward center over filling. Start at filled end and roll toward other side, wrapping tightly.
  3. Microwave wrap on HIGH until heated through (1 to 2 minutes). Serve immediately.
