Preparation

  1. Combine sour cream, mayonnaise, chili powder and lime juice in a small bowl with wire whisk. Set aside.
  2. To assemble sandwiches, spread 1 1/2 teaspoons sour cream mixture onto each bread slice. For each sandwich, layer 1 slice bread with 1 lettuce leaf, 2 slices tomato, 2 slices cheese, 1 pepper ring and 1/2 red onion ring and 1 slice bread. Press prepared sandwiches in Panini press. Alternate method, arrnage sandwiches on full sheet pan and place another sheet pan on top to slightly flatten sandwiches and melt cheese. Bake in conventional oven at 350°F for 12 to 15 minutes until cheese is melted and sandwich is heated through.
  3. Cut each sandwich into halves.
