Unsweetened chocolate10 ounces
Bittersweet chocolate2 lbs.
LAND O LAKES® Unsalted Butter, softened5.50 ounces
Eggs1 lb 6 oz (11 eggs)
Granulated Sugar2 lbs.
Brewed coffee or espresso2 ounces
Vanilla1 teaspoon
Chopped walnuts (or pecans)10 ounces
Mini Chocolate chips2 4 ounces (3 12-ounce bags)

Preparation

  1. Mix flour, baking powder and salt; set aside.
  2. Melt unsweetened and bittersweet chocolate with the butter; stir to blend; set aside.
  3. Beat eggs, sugar, coffee and vanilla with a whip on the stand mixer until light and thick, 6-8 minutes.
  4. Blend in the chocolate mixture on medium speed.
  5. Blend in the dry ingredients on low speed.
  6. Blend in the walnuts and chocolate chips.
  7. Chill dough.
  8. Scoop with a #100 scoop and roll in palms until smooth.
  9. Bake at 350°F on parchment lined sheets until just set, about 8 minutes. DO NOT OVERBAKE.
