English muffin bread, cubed 1-inch, toasted for 1 hour at 200°F.3 (1-pound) loaves
 
Sauce IngredientsMeasure
Reduced heavy whipping cream1 cup
Dulce de leche4 tablespoons
Sugar1 teaspoon

Preparation

  1. CHOCOLATE MIXTURE: Line 3 half hotel pans with aluminum foil. Spray with no-stick spray. Combine chocolate chips, brown sugar and butter in saucepan. Cook over low heat, stirring frequently, until smooth.
  2. EGG MIXTURE: Whisk together milk, eggs, vanilla, espresso and salt. Pour over bread cubes; toss carefully until bread absorbs most of the liquid.Fold chocolate mixture into bread mixture; transfer to prepared pan. Bake in 350°F. conventional oven for 30 to 40 minutes or until center springs back when gently pressed. Cool on wire rack 15 minutes. Refrigerate until firm.
  3. SAUCE: Combine reduced heavy cream, Dulce de leche and sugar. Serve sauce with warm bread pudding.
  4. To serve: Cut bread pudding into 1-inch rounds with cookie cutter. Place 1 round onto ceramic soup spoon. Drizzle with 1/2 teaspoon sauce.
