Fresh halibut fillets are wrapped in apple-smoked bacon, sautéed until golden brown, and brought to the table atop our specialty Cream Cheese Whipped Potatoes. Garnished with asparagus spears.

Ingredients

Bacon, apple smoked, thick sliced8 slice
LAND O’ LAKES® Clarified Blend, divided6 ounce
Cream Cheese Whipped Potatoes4 cup
Creamy mushroom sauce, prepared3 cup
Asparagus spears, canned or IQF, whole spears16 spear
Salt and pepper1 to taste
Halibut (5-to7-ounce fillets)8 fillet

Preparation

  1. Spread both sides of each halibut fillet with LAND O LAKES® Country Morning® Blend.
  2. Wrap each fillet with a bacon slice and fasten with toothpicks if needed.
  3. Place a portion of the LAND O LAKES® Clarified Blend in a large skillet and sauté halibut until golden brown and just cooked through, about 5 to 7 minutes.
  4. Place 1/2 cup of Cream Cheese Whipped Potatoes in center of a dinner sized plate. Place halibut on top of potatoes.
  5. Drizzle creamy mushroom sauce around edge of potatoes. Sauté the asparagus quickly in LAND O LAKES® Clarified Blend and place two spears over fish. Serve immediately. Repeat with remaining ingredients.
